Since *Henry* and I've been married, it's been my Thanksgiving "assignment" to make the desserts. I don't mind at all, and normally have the menu planned out weeks in advance. But for some reason I'm struggling this year. Do I go with the old standbys....or throw a new dessert into the mix? *Henry* likes the old tried and true recipes (why mess with a good thing?) while I like to experiment, and hopefully add a new creation to my repertoire. :)
The pastries MUST include:
-pumpkin pie
-banana cream tart
-pumpkin cheesecake
-kentucky derby pie
But today I've been thinking....all of these desserts are so rich (SO yummy, but incredibly rich) should I add something less.....heavy? Or maybe nix the cheesecake since we already have the traditional pie? I grabbed a BHG Holiday Baking mag the other day in hopes of finding something...but nothing jumped out at me. Lots of options for Christmas....but nothing for Thanksgiving. Hmmmmmmmm......what do you do for your desserts? Any really great recipes out there that I need to try?

OK, somebody please tell this city girl/"yankee" just what the heck *Kentucky Derby Pie* is...until then I am resigned to demand my Pumpkin Pie. LOL
I did just yesterday see a nice recipe for Pumpkin Pecan pie...looked good, although, I have never had Pecan Pie so I can only imagine....we did just buy one for this Thanksgiving but I am wondering if maybe I should keep the mystery alive and NOT try it?!?!?!? :D

You know, Martha had a Pie Baking Contest Winner on yesterday that made a Concord Grape Pie....something about it really sparked my interest - I had never heard of it before and I would imagine it is probably good....

This is tradional, but with a twist, and it's super easy!
Pumpkin Crunch
1pkg. yellow cake mix
1 16oz. can solid pack pumpkin
1 12ox. can evap. milk
3 eggs
1 1/2 c. sugar
4 t. pumpkin pie spice
1/2 t. salt
1 c. chopped pecans
1 c. melted butter
Preheat oven to 350. Grease bottom of 9x13 in. pan. Combine pumpkin, evap. milk, eggs, sugar, spice, & salt in a large bowl. Pour in pan. Sprinkle dry cake mix evenly over pumpkin mixture. Top with peecans. Drizzle with melted butter. Bake 50-55 min. or until golden brown. Cool completely.
Serve with whipped topping, of course!

Wow do I feel like the biggest holiday slacker or what. I picked up my dessert yesterday...Costco pumpkin pie. I love their pumpkin pie. And really, there are only going to be four adults. One dessert should be enough (I hope!).
I am guessing that *Henry* is not your husband's real name? Or is he just THAT cool that he gets * around his name?

Please, please let all of the Yankees (and us Canucks) know what "Kentucky Derby Pie" is! Very intriguing... I made an apron for a swap today and it wasn't too easy. You do such a nice job and have the neatest combos! I envy your ability.
